Protein Pancakes

Breakfast is definitely my favourite meal of the day.  During the week it’s usually a smoothie or a protein shake loaded with yummy ingredients, and at weekends or if I have more time, I love a more leisurely brunch of pancakes or poached egg or avocado on toast.  I must admit that having embraced clean eating again, and also having committed to giving up refined sugar for lent, I thought pancake breakfasts were going to be a thing of the past.

Then I discovered Myprotein Protein Pancake Mix and I must admit, I was rather excited. Myprotein offered to send me a sample of a new product and I genuinely did a little noise like an excited bleat when I opened the package as I’ve tried and failed to conquer protein pancakes in the past, so a protein pancake mix was like a gift from the Gods! Pancakes are my weakness, and the idea of being able to have them for breakfast and still feel smug that I made a healthy choice was very appealing.

These pancakes offer up over 30g of protein per serving (serving size is around two pancakes) and only 3.2g of fat and 191 calories, which is some pretty impressive figures for such a tasty brekkie.  You can make the mix with water or milk – I used Hazelnut Soy Milk to give them a bit of extra flavour.

As for the sweetness in them, they do have a little artificial sweetener in them (sucralose) which I still haven’t decided yet whether it’s allowed during my refined sugar free lent.  These delicious pancakes are the only thing stopping me saying I should avoid sweeteners, I don’t think I could give them up too, it would be too cruel!

I’ve been having my pancakes with various combinations of topping including Sweet Freedom syrup, blueberries, raspberries, strawberries, lemon juice, natural yoghurt and pre-lent I added demerera sugar.  All complemented by my obligatory morning green tea of course.

The pancakes are really easy to make and really tasty, especially with my yummy toppings.  The best thing is they keep me full until lunchtime due to the high protein content.  These are definitely going to be a key weapon in staving off the sugar cravings over the next five weeks and it’s an easy way to get some fruit in early in the morning too.
